Quick hearty lunch with spicy sausage rice wrapped in tortillas with salsa and sliced avocado

Recipe Ingredients for Gooey Rice with Tortillas

6 oz kielbasa
1 cup cooked rice
1 onion, chopped
1 red bell pepper, chopped
3 slices cheese
12 corn tortillas
2 tsp oil
2 tsp butter
2 oz picante sauce
3 oz sour cream
1 avocado

Recipe Directions for Gooey Rice with Tortillas

  1. Chopped onion and pepper

  2. Sauté in oil

  3. Add leftover cooked rice

  4. Cook until heated through

  5. Lay three slices cheese across top and leave to melt

  6. Sqoosh in sour cream and mix

  7. Heat corn tortillas

  8. Slice avocado

  9. Serve

  10. Eat: lightly butter tortilla, salt, drizzle with salsa, add gooey rice and a couple slices avocado, roll and eat

  11. Yum. Too many calories though. Sigh.
