Healthy, quick, tasty, and the best way to start your day! I've incorporated veggies, healthy oil, flavour, and even some cheese, without going overboard for our healthy way of living. I could not add orange bell pepper to the recipe, so please note the full oz of yellow. Try to get some orange if you can, and half the yellow. The colours are part of the joy of eating. :D

Recipe Ingredients for Good Morning Omlette

2 free run eggs, large
1/2 oz marble cheese
1 tsp Becel Light Margarine
1/2 oz green pepper
1/2 oz red pepper
1 oz yellow pepper
2/3 tsp red onion
1/2 tsp sea salt
1/4 tsp black pepper

Recipe Directions for Good Morning Omlette

  1. Heat a small, non stick pan on medium heat for about a minute. I've heard you can buy a type of aluminum pan, that is non-stick without all the nasty teflon. I just need to save up and go get myself one! :)

  2. Add your teaspoon of Becel light margarine, and let it melt a little.

  3. Toss your peppers and onion in the margarine, and let these cook on medium for a few minutes.

  4. While they cook, put your two eggs, salt, and pepper into a small bowl and beat well. I'm using some really nice sea salt I found in the spice section. The container has a built in grinder, so it makes me feel like a real chef! You have to get this thing.

  5. When the peppers and onion are still slightly crisp, spread them out on the bottom of the small pan and gently pour your egg mixture over top. If you pour too fast, the veggies get pushed to one side, and your omlette suffers. Haha!

  6. Let the omlette cook awhile, until there is only a little bit of liquid on the top. Sometimes I will lift the pan up, push the omlette with my spatula, and let the liquid run into the empty spot. This spreads out the omlette, and really makes it look bigger than it is. We all know how nice it is when it looks like you are getting a lot of food, when you actually are not. :)

  7. Many people would add the cheese at this point, flip one side of the omlette over the other side, and be done with it. Personally I detest gooey eggs, so I flip my omlette completely over at this point, and let it cook just a minute longer. I also add my cheese to one side of the omlette after I have flipped it.

  8. Once the minute has gone by, I flip the side of my omlette that has no cheese on it over top of the cheesy side. Now I have a tasty, warm omlette with a cheesy center.

  9. Now put it on a plate, and dig in! POWER TO THE HEALTHY EATERS! I LOVE YOU! KEEP UP THE GOOD WORK!
