Recipe Ingredients for Good Morning Muffins

1 1/2 cups whole wheat flour
1/2 cup oatmeal, ground
2 tbsp flax seed, ground
2 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
1/2 cup fat free plain yogurt
1/2 cup apple sauce
1/2 cup carrot, grated fine
2 tbsp maple syrup
2 tbsp honey or blue agave nectar
1 tsp vanilla
1/4 cup water
2 egg whites, beaten
1 tbsp coconut oil
2 tbsp almond butter
1/2 tbsp sesame seeds
1/2 tbsp pumpkin seeds
1/2 tbsp sunflower seeds
1 tbsp walnuts
1 tbsp almonds

Recipe Directions for Good Morning Muffins

  1. Combine flour, ground oatmeal, flax seeds,cinnamon, soda, salt, nut & seeds. Set aside.

  2. Mix coconut oil & almond butter.

  3. Mix yogurt, apple sauce, carrot, maple syrup, honey,vanilla & water into coconut oil & almond butter. Set aside.

  4. Beat egg whites to soft peaks.

  5. Fold egg whites gently into wet ingredients.

  6. Fold dry ingredients into wet until just combined.

  7. Divide batter into 12 lightly greased or paper lined muffin cups.

  8. Bake at 350 degrees for 22-25 minutes.
