Creamy and tasty leek potato soup.

Recipe Ingredients for Good Eats Potato Leek Soup

1 lb. leeks
3 tbsp. Vegan Buttery Sticks
1 salt
14 ounces Yukon Gold Potatoes
1 quart vegetable broth
1 cup cream
1 cup buttermilk
1/2 tsp. pepper
1 tbsp. chives

Recipe Directions for Good Eats Potato Leek Soup

  1. Chop the leeks into small pieces.

  2. Melt the butter in 6 Qt.saucepan over medium heat. Add the leeks and a heavy pinch of sale and sweat for 5 minutes. Decrease the heat to med/low and cook under tender about 25 minutes.

  3. Add the potatoes and broth, bring to a boil. Reduce the heat to low, cover and simmer until the potatoes are soft, about 40-45 minutes.

  4. Turn off heat and puree mixture with an immersion blender until smooth. Stir in the cream, buttermilk and pepper. Sprinkle with chives and serve immediately.
