Definitely higher in calories, but for special occassions it's not TOO bad...extremely delicious!

Recipe Ingredients for "The Good Days" Sauteed Chicken

4 chicken breasts
1 1/2 tbsp unsalted butter
1 1/2 tbsp olive oil
1 Salt and pepper
4 tbsp shallots, finely chopped
2 cloves garlic, minced
1 glass white wine, dry (about 1 cup)
1 cup chicken stock
3/4 cup heavy cream

Recipe Directions for "The Good Days" Sauteed Chicken

  1. Season chicken breasts with salt and pepper on both sides

  2. Heat butter and oil in a heavy bottomed pan over high heat until butter stops foaming and just starts to turn a light brown

  3. Saute the breasts until they are lightly brown on one side, approx. 3 minutes

  4. Turn breasts over and saute for another 3 minutes, again until lightly browned.

  5. Transfer breasts to a plate, cover with aluminum foil, and keep warm in the oven set at low.

  6. Remove the pan from the heat source and add half of the wine to deglaze the pan, stirring to dissolve the flavorful brown bits stuck to the pan.

  7. Return the pan to the stove and add the shallots and cook until translucent, about 2 minutes.

  8. Add the garlic and cook for 1 minute, making sure the garlic doesn't burn.

  9. Add the remaining wine and reduce (boil) until only a trace of wine is left in the pan.

  10. Add the chicken stock and reduce to half the original amount, approx. 6-7 minutes.

  11. Add the cream, and again reduce until the sauce is thick enough to coat a spoon.

  12. Spoon sauce over chicken breasts and serve.
