traditionally stuffed cabbage leaves. but i had lettuce and that worked fine too

Recipe Ingredients for golubtsy

300 grams lean ground turkey
1 head lettuce
1/2 large onion
1/2 cup shredded carrots
1/4 cup green onions
3 cloves garlic
1/2 cup cooked brown rice
87 grams Ajvar
1/2 cup tomato sauce

Recipe Directions for golubtsy

  1. put the lettuce(or cabbage) in water and bring to a boil. let boil for about 10 minutes. make sure you save some of the water from after you're done boiling the lettuce

  2. meanwhile make the stuffing. mix the meat with chopped onions, carrots, salt and pepper and whatever other herbs you might like. and don't forget the garlic! add the rice and mix it all up real nice.

  3. take out the lettuce or cabbage and separate the leaves. lay them out flat to let them cool. once they cool put 1-2 tablespoons of stuffing on the open leaf and wrap it. my leaves were a bit different in size so i had to put more or less of the stuffing in some. just use your judgement.

  4. as you wrap them put them into a deep pot, preferably with a thick bottom. layer them on top each other. once all are wrapped and in the pot pour enough of the lettuce water to cover the golubtsy. put some ajvar on top. i put a tablespoon but it's up to you. throw in some tomato sauce.

  5. cover, put on stove and let come to a boil. then lower the fire to the lowest setting and let it simmer covered for 30-45 minutes.

  6. serve with sour cream or greek yogurt!
