Recipe Ingredients for Golden Vanilla Cupcakes

1 c unsweetened soy milk
1 tsp apple cider vinegar
3/4 c granulated sugar
1/3 c canola oil
2 tsp vanilla extract
1/4 tsp almond extract
1 1/4 c flour
2 tbsp cornstarch
1/3 c cocoa powder
1/2 tsp baking soda
3/4 tsp baking powder
1/4 tsp salt

Recipe Directions for Golden Vanilla Cupcakes

  1. Preheat oven to 350 F and line a muffin pan with paper or foil liners.

  2. Whisk together the soy milk and vinegar in a large bowl, and set aside for a few minutes to curdle.

  3. Add the sugar, oil, vanilla, and almond extract and beat until foamy.

  4. Sift in the flour, cornstarch, baking soda, baking powder, and salt. Mix until no large lumps remain

  5. Pour into liners, filling two-thirds of the way. Bake 20 to 22 minutes, until a toothpick inserted into the center comes out clean. Transfer to a cooling rack and let cool completely.
