Recipe Ingredients for golden split pea soup

1 tsp olive oil
3 cups onions, chopped
1 tbsp ginger, grated
1 1/2 tsp cumin
1 tsp coriander
1/2 tsp turmeric
7 cups water
1 cup split peas
2 cups sweet potatoes, cubed
1 cup apple, cubed
2 tsp chili powder
3/4 cups tomatoes, chopped
2 tbsp lime juice
1 tbsp soy sauce

Recipe Directions for golden split pea soup

  1. saute onions in olive oil until soft (about 8 minutes)

  2. add ginger, cumin, coriander, turmeric and saute about a minute

  3. add water, yellow split peas, sweet potatoes, apple, & chili powder

  4. cover & bring to a boil

  5. lower heat and simmer, uncovered, 45 minutes-1 hour until peas are soft

  6. add tomatoes, lime juice, and soy sauce

  7. puree mixture using an immersion blender
