Recipe Ingredients for Golden Spiced Lentil Soup

2 cups dry yellow split peas
4 cups low sodium chicken broth
4 cups water
1 large yellow onion
3 cloves garlic, minced
1 tbsp olive oil
1 tbsp butter
1/8 tsp cinnamon
1/16 tsp nutmeg
1/8 tsp ground cloves
1/8 tsp black pepper
1/2 tsp curry powder
1/4 tsp cumin
1 tsp coriander powder
1 tsp turmeric powder
1/4 tsp cayenne pepper
1/2 cup honey
1 tbsp candied ginger, minced

Recipe Directions for Golden Spiced Lentil Soup

  1. Cook onion and garlic in butter/oil until soft.

  2. Add all dry spices to onion mixture and cook 1 minute.

  3. Add peas (pre-soaked 2 hrs) and broth and water.

  4. Cover and cook for 1.5 hours or longer until peas/lentils lose their shape.

  5. Can garnish with sour cream if desired.
