Recipe Ingredients for Golden Parmesan Potatoes

1 1/2 lbs red potatoes
2 tablespoons parmesan cheese
1/8 teaspoon black pepper
2 tablespoons chopped green pepper
1 tablespoon olive oil
1/8 teaspoon salt
2 tablespoons chopped red onion

Recipe Directions for Golden Parmesan Potatoes

  1. Preheat oven to 425. Cut potatoes into medium chunks (leave unpeeled).

  2. In large bowl, combine cheese, salt and black pepper; set aside.

  3. In large plastic bag, pour olive oil over potatoes; toss to coat.

  4. Add cheese mixture to potatoes and toss to coat.

  5. In 13 x 9 inch baking dish, arrange potatoes in single layer, then sprinkle with onion and green pepper.

  6. Bake, stirring occasionally, 40 minutes or until potatoes are tender and golden.
