Recipe Ingredients for Golden Oatmeal/Cottage Cheese Pancakes

1 cup Fat Free Cottage Cheese
1/4 tsp Cinnamon, Ground
1/4 tsp Vanilla Extract
1 cup dry Quick Quaker Oats
6 large Egg, White
1/2 cup Joseph's Original Sugar Free Maple Syrup

Recipe Directions for Golden Oatmeal/Cottage Cheese Pancakes

  1. In a blender, combine all ingredients EXCEPT syrup. Blend on medium speed until smooth, about 1 minute. Pour batter, about 1/4 cup at a time, onto hot skillet (medium heat). Cook pancake until bubbly on top and dry around edges, about 3 minutes. Turn and cook other side until golden brown, about 2 more minutes. Microwave maple syrup until warm, about 20 seconds.

  2. Optional: top with berries.
