Recipe Ingredients for Golden Harvest Muffins

2 cups unbleached white flour
2 cups whole wheat flour
2 cups sugar
4 teaspoons baking soda
4 teaspoons cinnamon
1 teaspoon salt
1/2 teaspoon cloves
4 cups apples, peeled & shredded
1 cup carrots, shredded
1 cup coconut
1 cup raisins
1 cup walnuts, chopped
1 1/2 cups canola oil
1/2 cup 2% milk
4 teaspoons vanilla
3 eggs, beaten

Recipe Directions for Golden Harvest Muffins

  1. Heat oven to 350. Spray 12 muffin cups with Pam. In very large bowl, combine unbleached flour, whole wheat flour, sugar, baking soda, cinnamon, salt and cloves.

  2. Add apples, carrots, coconut, raisins, and walnuts; mix well.

  3. In small bowl, mix oil, milk, vanilla and eggs. Stir into flour mixture, just until moistened.

  4. Fill muffin cups 3/4 full. Bake at 350 for 20-25 minutes or until toothpick inserted in center comes out clean. Immediately rem ove from pans and bake next batch.
