Golden Flaxjacks Recipe

Whole grains add texture and flavor to any recipe, and flaxseed contains heart healthy omega-3s. Cook over moderate heat so they don't burn; the flaxseed makes them brown more quickly. Two four inch flaxjacks is one serving.

Recipe Ingredients for Golden flaxjacks

1 cup whole wheat flour
1/2 cup corn meal
4 tablespoons Flax Seed
2 teaspoons baking powder
1/2 teaspoon salt
2 egg whites
1 3/4 cups fat free milk
2 tablespoons extra virgin olive oil
1/2 teaspoon vanilla extract

Recipe Directions for Golden flaxjacks

  1. In large mixing bowl, combine Fluor, corn meal, flaxseed meal, baking powder and salt, set aside.

  2. In a small mixing bowl, whisk together egg whites, milk, oil, and vanilla until smooth. Make a well in dry mixture and add liquide mixture to it. Stir until just combined. Allow batter to sit 30 minutes or over night in refrigerator?

  3. Heat a nonstick skillet or griddle. Using a 1/4 cup measuring cup, pour a scant 1/4 cup onto the griddle. Cook until flaxjacks are puffed and dry around the edges. Turn and cook other side till golden brown.

  4. We like to add a cup of our favorite fruit on top with 1 tablespoon maple syrup. They are very yummy!
