0.5 cup Chickpea Flour (Besan)
3 tsp Organic Garam Masala
1 tsp Fennel Seed
1 tsp, ground Cardamom
1 tsp Paprika
0.13 tsp Sea Salt
0.5 cup (8 fl oz) Yogurt, Plain, Whole Milk, 8 Grams Protein Per 8 Ounce
3 Teaspoon Juice
2 tbsp Grapeseed Oil
1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
2 cup Peas, Green
1 tsp Cumin
1 tsp Spices Ground Coriander
0.13 tsp Sea Salt
0.13 tsp Pepper, Black
0.5 cup (8 fl oz) Yogurt, Plain, Whole Milk, 8 Grams Protein Per 8 Ounce
0.5 cup (8 fl oz) Water

Recipe Directions for Golden Eggplant with Green Pea Sauce

  1. For Green Pea Sauce:

  2. Put the peas, cumin, ground coriander, salt, black pepper, 1/2 cup yogurt, and water in a blender; purée until smooth. It should be a thick saucy consistency. Add a little more water if it seems too thick. [Yields about 3 cups]

  3. For Golden Eggplant:

  4. In a large bowl, combine the chickpea flour, garam masala, fennel, cardamom, paprika, salt, 1/2 cup yogurt, and lemon juice; mix well. The mixture should have a pancake batter consistency. If it seems too thick, add a little water to thin it out.

  5. Slice eggplant into 1/4-inch-thick slices. Begin to heat the oil over medium-high heat and dip the eggplant slices in the batter and then place into the hot oil. Fry the eggplant until golden brown on the first side and then carefully turn the slices and fry on the other side until the eggplant is tender and golden on both sides, about 7 minutes total.
