I know, Golden Curry isn't supposed to have tomatoes and peas, but I like them, and they're good in this.

Recipe Ingredients for Golden Curry

16 oz. chicken breast
1 c. cauliflower
1 c. yams
1/2 c. tomatoes
1/4 c. frozen peas
1/4 c. raisins
3 T. vegetable oil
1/2 c. onion
2 T. ginger
1 T. garlic
1 T. mustard seeds
1 T. garam masala
1 t. turmeric
1/2 t. red pepper
1 c. coconut milk

Recipe Directions for Golden Curry

  1. Add oil to wok, when hot, add mustard seeds. When they start to pop, add onion, ginger, garlic, garam masala and turmeric. Cook until onions are translucent and spices fragrant.

  2. Add chicken, when cooked through, add yams and cauliflower, just a touch of water, cover and let veggies steam about 10 min.

  3. Uncover, add all the rest of the ingredients and let simmer another 5 or 10 min. depending how you like your veggies. Goes great with puppadums.
