Muffins made with pulp from my Jack LaLanne juicer.

Recipe Ingredients for Golden Carrots Muffins

3 cup Whole Wheat Flour
4 tsp Baking Soda
3 1/2 cup, chopped Carrots
1 cup, diced Pineapple
1 cup Honey, Strained Or Extracted
2 tbsp Cinnamon, Ground
1 tsp Nutmeg, Ground
6 large Egg, White
1 tbsp Vanilla Extract
8 oz 100% Pure Canola Oil
1 1/2 cup pieces or chips Walnuts, English

Recipe Directions for Golden Carrots Muffins

Preheat oven to 350. Grease muffin pan. Mix carrot/pineapple pulp well. Add egg whites, vanilla, honey, and oil. Blend into pulp mixture. Mix in nuts. Fill muffin pan. Bake 45 minutes.
