Golden winter squash & Mustard greens with raisins, almonds and panko crust.

Recipe Ingredients for Gold & Greens Casserole

4 cup, cubes Squash, Winter, All Varieties
4 cup, chopped Mustard Greens
0.3 cup, packed Raisins, Golden Seedless
2 oz Slivered Almonds
2 tbsp Agave Nectar
1/2 cup Panko
0.5 oz Bread Crumbs Plain

Recipe Directions for Gold & Greens Casserole

  1. Preheat oven to 400. Cook and cube squash. Remove stems, chop and steam or microwave greens, drain, reserving liquid.

  2. Melt the butter.

  3. Cover bottom of an 8x8 baking dish with the squash. Sprinkle raisins over. coat greens evenly with 1 T of the butter. Layer the greens over the squash, drizzle the Agave over the mixture.

  4. Mix the bread crumbs, almonds, and remaining butter to coat and moisten. Spread evenly over the dish.

  5. Bake for 20-25 minutes, or until golden brown.
