Freeze cookies in individual portions for future baking and portion control. Just take out as many as needed and bake as soon as they are fully thawed.

Recipe Ingredients for Goji Oatmeal Cookies

1 c flour
1/2 t baking soda
1/2 t cinnamon
1/4 t salt
10 T margarine
1/2 c sugar
1/2 c golden brown sugar, packed
1 egg
1 t vanilla
1 c oats
1 c dark chocolate chips
1/2 c goji berries

Recipe Directions for Goji Oatmeal Cookies

  1. Preheat oven to 350

  2. Mix together flour, baking soda, cinnamon and salt.

  3. Beat room temperature margarine and sugars until well incorporated.

  4. Add egg and vanilla

  5. Add oats and flour mixture

  6. Add chips and goji berries.

  7. Use tablespoon to measure out individual cookies, placing each scoop ~2 inches apart on cookie sheet

  8. Bake ~16 minutes, until brown around edges

  9. Cool 5 minutes on baking sheet

  10. Transfer to cooling rack until cool enough to store.
