A light treat. Enjoy. You can use orange juice and orange zest for a Goey Orange Pudding if you would prefer. Portions can also be made smaller.

Recipe Ingredients for Goey Lemon Pudding

10 g lemon juice
115 g sugar
600 ml water
2 eggs
50 ml milk
225 g plain flour
15 g baking powder
10 g lemon, zest
115 g butter
115 g caster sugar

Recipe Directions for Goey Lemon Pudding

  1. Preheat oven to 180c and grease a 2.5-2.8l ovenproof dish with some of the butter. Put the lemon jiuce, sugar and water in a large saucepan and boil briskly for 5 minutes. Then put this to one side as this will become the goey centre.

  2. For the sponge whisk together the egg and milk in one bowl. Sift all the dry ingredients into another bowl. Beat the butter and sugar together in another bowl. Gradually add the egg mixture to the fat mixture, add a litte at a time, alternately with the dry ingredients. Beat well for one minute.

  3. Put the sponge mixture into the greased dish and pour hot sauce over the sponge mixture. Bake for 40 minutes. Then serve.
