Recipe Ingredients for GOBHI MUSSALLAM

8 cups Cauliflower florets
1 Salt to taste
1 1/2 tsp Turmeric
1 1/2 tsp Ginger root, peeled (really 1 1/2 inches)
10 cloves Garlic, peeled
1/2 cup pumpkin seeds (really magaz; melon seeds)
2 tbs olive Oil
2 Onions, grated
1 tsp Cumin powder
1 tbs chili powder
1 tbs Coriander powder
1 tsp Garam masala
1/2 cup Tomato puree
1/2 cup powdered milk (really supposed to be khoya [Mawa])
113 grams cream (1/2 cup, 5%)

Recipe Directions for GOBHI MUSSALLAM

  1. Soak half a cup of melon seeds in one cup of water for an hour. Drain and grind to a fine paste.

  2. Grind ginger and garlic to a paste.

  3. Boil cauliflower in salted water with one teaspoon turmeric powder till half cooked.

  4. Heat oil in a kadai. Add grated onions and sauté until golden brown in colour.

  5. Add ginger-garlic paste, cumin powder, red chilli powder, coriander powder, remaining turmeric powder, garam masala powder and salt. Sauté for half a minute.

  6. Add tomato puree and cook till fat leaves the masala.

  7. Add melon seed paste dissolved in one cup of water. Bring it to a boil.

  8. Add khoya (cream and powdered milk combined)and mix well.

  9. Add the half boiled cauliflower and cook covered on low heat for fifteen minutes.
