Recipe Ingredients for Goat Cheese & Sun Dried Tomato Crusted Chicken

1 pound chicken
1 ounces goat cheese
1/2 cup tomatoes, sun dried chopped
1/2 cup bread crumbs
2 tablespoons lemon juice
1/2 cup bread crumbs

Recipe Directions for Goat Cheese & Sun Dried Tomato Crusted Chicken

  1. Place four 6 ounce chicken breasts on a prepared broiler pan

  2. Chop the tomatos and blend with the goat cheese and lemon juice

  3. Spread evenly over the chicken

  4. Roll up each piece of chicken to enclose the tomato and cheese

  5. Roll in bread crumbs.

  6. Bake at 350 f, for 30 minutes or until the chicken is done.
