1 whole egg
2 egg white
25 g goat cheese
25 g smoked salmon
1/4 cup 2% milk
1 cup frozen spinach
1 tbsp olive oil
1/2 onion, medium
1 tsp minced garlic

Recipe Directions for Goat Cheese-Spinach-Salmon Omelette

  1. beat eggs with milk

  2. sautee onions and garlic with olive oil, salt and pepper

  3. add eggs to onions

  4. sear on medium-high for 3 minutes

  5. add cheese, salmon, and spinach

  6. fold over omelet and cook on medium low until done.
