Recipe Ingredients for Goat Cheese and Greens Lasagne

8 oz goat cheese
4 cloves garlic
1 tsp dried oregano
1 tsp dried basil
1 tsp dried thyme
28 oz canned crushed tomatoes
9 oz whole wheat pasta
3 roasted red peppers
4 cups arugula
4 cups spinach
3 cups chopped kale
1/4 cup parmesean cheese

Recipe Directions for Goat Cheese and Greens Lasagne

  1. Boil the lasagna noodles, rinse and set aside

  2. Boil the Kale in the same water, strain and toss with the other greens

  3. Mix the herbs, garlic and cheese and set aside.

  4. Put a layer of crushed tomatoes in the bottom of the pan, then cover with 3 of the noodles.

  5. Add 1/2 of the greens, 1/2 of the red peppers, more crushed tomatoes, and 1/2 of the cheese mixture.

  6. Cover with noodles, and repeat, ending with noodles and sauce.

  7. Sprinkle top with parm, then cook through at 400 degrees (45 minutes to an hour, depending).

  8. Let stand for 10-15 minutes before slicing.
