Goat Cheese Frittata With Red Peppers & Mushrooms

Recipe Ingredients for Goat Cheese Frittata with Red Peppers & Mushrooms

3 tablespoons Olive Oil
1 Yellow Onion
1 Red Pepper
3/4 cup baby bella mushrooms
3 Eggs
6 Egg Whites
2 tablespoons Oregano
3 ounces Goat Cheese

Recipe Directions for Goat Cheese Frittata with Red Peppers & Mushrooms

  1. Heat Oil on 10 inch oven proof skillet

  2. Cook onions until golden

  3. Add red pepper and mushroom

  4. While vegetables are cooking, mix eggs, oregano and salt & pepper in a bowl

  5. Arrange vegetables in pan and poor eggs on top

  6. Cook without stirring for 3 minutes until set

  7. With a spatula carefully pick up edges so uncooked eggs can cook fot another 5 minutes

  8. Preheat broiler

  9. Crumble goat cheese on top and cook in broiler until eggs are set and cheese is melted
