I just bake mine on a cookie sheet sprayed with PAM for about 15 min. on 375 .. then put the sauce on them .. yum I tried these and now they are a regular fixing in my home. I am diabetic, so I have to really watch my carb intake and these are just perfect. My family loves spaghetti and lasagna and all of those good things but they aren't on the menu much for me anymore, these little darlings more than make up for what I must miss!!!! The only problem is........my husband and kids always want some of MY gnudis instead of THIER pasta! They really ae great!! You can exchange the spinach for cilantro, parsley, I even tried them with chopped up broccoli, chopped up brussel sprouts...try anything in them!!

Recipe Ingredients for Gnudi (Serving size is 2)

1 cup Fat Free ricotta cheese
1 pound frozen spinach, thawed and squeezed dry
1 cup Parmesan cheese, grated
2 tsp. garlic, minced
1/2 cup Better'n eggs
2 egg yolks
1/3 teaspoon freshly grated nutmeg
1 teaspoon salt
1 teaspoon freshly ground black pepper
5 tablespoons all-purpose flour, plus 1 cup for coating
25 ounces (1 jar) marinara sauce, (store bought) heated

Recipe Directions for Gnudi (Serving size is 2)

  1. Bring a large pot of salted water to a boil.

  2. In a large bowl, mix ricotta, spinach, Parmesan cheese, eggs, and yolks.

  3. Stir in minced garlic,nutmeg, salt, pepper, and flour.

  4. Form mixture in to small, flattened balls.

  5. Dredge the formed Gnudi in flour to coat, tapping off the excess.

  6. Slide formed gnudi into the low simmer-boiling water.

  7. Be careful not to overcrowd the pan; work in batches if necessary.

  8. Remove the Gnudi using a slotted spoon after they float to the top and have cooked for about 4 minutes.

  9. Serving size is 2 Gnudi's
