If desired, you can use tortellini instead of gnocchi. This recipe is adapted from the December 2001 issue of Vegetarian Times. This makes 2 VERY BIG servings.

Recipe Ingredients for Gnocchi Stew With Spinach and Tomatoes

16 oz pasta
1 T olive oil
4 cloves garlic, minced
9 oz fresh baby spinach
28 oz can diced tomatoes
1/2 t dried oregano
1/4 t dried basil
1/4 cup Italian parsley, chopped
1/4 t red pepper flakes

Recipe Directions for Gnocchi Stew With Spinach and Tomatoes

  1. Cook pasta.

  2. Saute garlic in oil. Add spinach, tomatoes, and dried spices. Cook until spinach is tender and broth/sauce thickens. Add gnocchi and parsley. Stir.

  3. Serve in shallow bowls.
