Recipe Ingredients for Gnocchi

2 1/2 lbs russet potatoes
1 large egg
1 tsp. salt
1 cup white flour

Recipe Directions for Gnocchi

  1. Prick potatoes with a fork all over and bake either in the oven or microwave until fork tender, not completely soft.

  2. Let cool slightly and peel.

  3. Using the large holes on a cheese grater, grate the potatoes and put into a large bowl.

  4. Add the egg and salt to the potatoes and mix well with a spatula.

  5. Next, slowly add flour a half cup at a time, up to 1 1/2 cups, until a dough forms that does not stick to your hands.

  6. Turn dough out onto floured surface and need about 4 minutes. Then split into 6 sections.

  7. Roll each section into a long rope. Thickness is dependent on personal preference.

  8. Using a pizza cutter, cut into inch long sections.

  9. Bring salter water to a boil and dump gnocchi in. Once floating, let boil 2-5 minutes longer depending on thickness.

  10. Scoop out of water with a strainer or slotted spoon.

  11. Serve hot with favorite sauce (pesto recommended) or chill for pasta salad.
