a potato pasta...very heavy so portions can be smaller

Recipe Ingredients for Gnocchi

2 large russet potatoes
1 tsp salt
1 egg
1 1/2 cups whole wheat flour

Recipe Directions for Gnocchi

  1. Boil potatoes with skins on.

  2. Mash potatoes, or use a potato ricer.

  3. Mix/knead together potatoes, flour, salt and egg. Do not over-mix.

  4. Roll into long logs, then cut into inch-long pieces.

  5. You can leave the pieces like this, or use a fork or your nail to make an indent in each piece.

  6. Boil water and add pieces; mix regularly so they don't stick to each other. Gnocchi should be al dente; not too hard, not mushy.

  7. Enjoy with your favourite sauce!
