Recipe Ingredients for Gnocchi

59 g goat cheese
1 kg potato
2 egg yolk
280 grams rice flour

Recipe Directions for Gnocchi

  1. Boil whole potatoes (1 Kg) until tender (just cover potatos with cold water and bring to boil about 15-20 minutes until able to pierce easily with a fork)

  2. Drain

  3. Let cool until able to handle with a lint-free towel and paring knife to remove the skins.

  4. Mash potatoes while hot. Let cool enough so they won't cook the egg yolk(s) 1-2 depending on whether dough needs more moisture.

  5. Mix the potatos with a spatula: 90g parmesan cheese (I tried 59 grams goat cheese, could use more flavor), the egg yolk(s) and 280 g of flour (I used a blend of 1 cup rice flour 1.66 cup sorgum, 1 tsp xantham gum, 1/3 cup tapioca starch). Dough to be moist but not sticky.

  6. Divide dough into 6 to 8 pieces of roughly equal size. gently roll each piece into a rope about thumb thickness. Cut each piece into 1/2" pieces.

  7. Bring pot of water to boil. Drop in gnocchi in batches. When gnocchi floats remove them with slotted spoon and either put into serving dish to serve right away or drop in ice water bath if saving for later. Drizzle gnocchi with olive oil to keep them from sticking.

  8. Can serve with butter, cheese, garlic, pepper flakes and basil strips. Or your favorite pasta sauce!
