Italian spinach + ricotta dumplings

Recipe Ingredients for Gnocchi di spinaci

300 g frozen spinach
100 g ricotta
1 egg yolk
40 g parmesan
30 g plain white flour
15 g butter
1/8 tsp nutmeg
1/8 tsp cinnamon
1 tsp salt
1/4 tsp ground black pepper

Recipe Directions for Gnocchi di spinaci

  1. In a bowl, mix spinach (defrosted), ricotta, yolk, grated parmesan, salt, pepper, nutmeg, cinnamon.

  2. Cool for 1-2 hours.

  3. Take some mix, make into a "snake" on a floured surface, cut into small walnut-sized pieces & roll each into a little ball.

  4. Cook in boiling salted water for ~2 mins, until they float.

  5. Serve hot with butter.
