Recipe Ingredients for gnocchi carbonara with lovely vegetables

200 grams Squash, Summer, Zucchini, Includes Skin
200 grams Yellow Squash
80 grams Asparagus
6 medium slices, cooked (raw product packed 20/lb) Pork, Cured, Bacon
2 tsp Pepper, Black
40 grams Double Cream
4 large Egg, Yolk
1 serving nonna rosa spinach gnocchi
1 serving nonna rosa spinach gnocchi
4 tbsp Parmesan, Grated Cheese

Recipe Directions for gnocchi carbonara with lovely vegetables

  1. Start the pot boiling (have about 2L of water)

  2. Start cooking finely diced bacon.

  3. Once the fat has been rendered from the bacon add the sliced squash and asparagus. Add the pepper now.

  4. Drain the gnocchi once it has risen to the surface. Reserve some cooking water.

  5. Once the squash are cooked add the cooked gnocchi.

  6. Beat together four egg yolks and double cream.

  7. Once the vegetables and bacon have cooled sufficiently beat in the egg and cream mixture as well as some of the reserved liquid to ensure an even coating.

  8. Add parmesan and serve.
