Glutinous rice flour again, however these are smaller. They are boiled and kept in sugar water to prevent stickiness rather than dusted with cornstarch and kept dry, therefore the surface skin is somewhat more sticky than with the dry cakes.

96.37 g sweet (glutinous) rice flour
95 ml water
15 ml cornstarch for dusting

Recipe Directions for Glutinous rice flour dumplings

  1. UK measurements are 0.5 cup glutinous rice flour and 2/3 cup water. You probably need to use the cornstarch more liberally but I am estimating that a total of 1 tablespoon of cornstarch will actually coat the rice balls.

  2. Heat up a panful of water. Remove 2/3 cups of the water when it is relatively hot, but not hot enough to burn your hands - about 60 deg C? Maintain the water in the pan at about 80 deg C.

  3. Add the water to the glutinous rice flour and mix it to form a dough that is reasonabably firm yet pliable.

  4. Wash your hands throughly of any dough sticking to your hands and dry them. Form balls of your filling and place them on a clean chopping board.

  5. Dust your hands throughly with cornstarch. Using the rice dough, form a small ball of the dough. Flatten it and place a small amount of filling in the middle, wrap the dough around it to form a ball. Increase the heat in the boiling pan to about 90 deg C. Repeat the formation of the balls till all the dough is used up.

  6. Drop the balls into the hot water carefully - you don't want them to break! Boil for about 5 minutes at medium heat.

  7. Store in sugar water so that the balls don't stick together. The dumplings are best eaten right after cooking but I think they should last a maximum of a day and a half in the fridge stored in water.
