Recipe Ingredients for Glutinous rice cakes

96.37 g sweet (glutinous) rice flour
95 ml water
15 ml cornstarch for dusting

Recipe Directions for Glutinous rice cakes

  1. UK measurements are 0.5 cup glutinous rice flour and 2/3 cup water. You probably need to use the cornstarch more liberally but I am estimating that a total of 1 tablespoon of cornstarch will actually coat the rice balls.

  2. Make 6 balls of your filling and set aside.

  3. Place the water and flour in a ceramic/glass microwavable bowl and mix the ingredients well.

  4. Microwave the ingredients in the bowl at around 600W for about 1.5 minutes until the dough inflates.

  5. While the ingredients are in the microwave, dust a chopping board with the cornstarch.

  6. Stir the dough well upon removing it from the microwave. Dry your hands and dust them before removing the dough from the bowl. Be careful as the dough will be very hot.

  7. Divide the dough into 6 rounds. Flatten the rounds before placing the filling inside and shaping the rice balls. Dust the outside of the balls very lightly with cornstarch to prevent them from sticking together.

  8. Keep the rice balls in an airtight container in a cool dry place for about 2 days.
