Recipe Ingredients for Glutinous Rice Cake - Biko

2 cups glutinous rice
3/4 cup sugar
1 tablespoon vanilla
13 1/2 ounces coconut milk
40 ounces of water (3 cans)
13 1/2 ounces coconut milk

Recipe Directions for Glutinous Rice Cake - Biko

  1. Wash rice until water is clear.

  2. In a heavy saucepan bring rice in coconut milk and water to a boil, reduce heat to simmer and continue stirring. Cook for 15.

  3. Add sugar and vanilla (pandan essence if available). Continue stirring for 5 more minutes until liquid is absorbed.

  4. Line a shallow baking dish with banana leaves and spread rice mixture.

  5. For the second can of coconut milk, reduce until it forms curds (latik). Top rice mixture with latik and bake at 350F for 15 minutes.
