Recipe Ingredients for Gluten & Sugar-free banana bread

1/2 cup rice flour
3/4 cup soy flour
3/4 cup flax
2 tsp baking powder
3 tsp cinnamon
1/2 tsp ginger
1/2 tsp clove
1/2 tsp cardamom
1/2 tsp nutmeg
1/4 tsp salt
2 cup banana
1 cup honey
1/4 cup oil
3 tsp vanilla

Recipe Directions for Gluten & Sugar-free banana bread

  1. preheat oven to 350 degrees

  2. mix dry ingredients in a bowl: rice flour, soy flour, flax flour, baking powder, cinnamon, ginger, clove, nutmeg, cardamom, salt)

  3. mix wet ingredients in another bowl: banana, honey, oil, vanilla

  4. mix wet ingredients into dry

  5. grease an 8 1/2 x 4 1/2 loaf pan with butter, margarine or non-stick spray

  6. pour batter in loaf pan. bake for about 55-60 minutes until dark brown, or until a toothpick inserted in the center comes out clean (this time may vary depending on your oven)

  7. let cool in the pan on a rack for at least 10-15 minutes before unmolding to cool completely on the rack
