Gluten free muffins as a option for those who are not able to eat gluten

Recipe Ingredients for gluten free zucchini muffins

1/2 cup zucchini
4 eggs
1/4 cup coconut oil
2 1/2 tablespoon honey
1 teaspoon vanilla extract
1 1/2 teaspoon cinnamon
1/4 teaspoon salt
3/8 cup Organic Coconut Flour
1/2 teaspoon baking powder

Recipe Directions for gluten free zucchini muffins

  1. Preheat oven to 350

  2. combine everything but the coconut flour and baking powder, and mix.

  3. Mix in dry ingredients until smooth

  4. pour into greased muffin tins and bake for 20-25 minutes (until firm to the touch)
