Recipe Ingredients for Gluten Free Zucchini Muffins

240 g Bob's Red Mill Gluten Free All-Purpose Flour, or 2 cups total
52 g flaxseed meal or 1/2 cup total
2 tsp baking powder
2 tsp baking soda
1 tsp salt
1 tsp xanthan gum
2 tsp ground cinnamon
1 tbsp pumpkin pie spice
1/2 cup coconut oil
5 1/3 ounces agave nectar or 2/3 cup total
2/3 cup rice milk
2 tsp pure vanilla extract
2 cups zucchini, shredded
1/4 cup carrot, shredded
