Recipe Ingredients for Gluten Free Zucchini Bread

1 cup almond meal
1 cup brown rice flour
230 grams (1 cup) organic quinoa flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
3 tsp cinnamon
3 tbs flaxseed meal
1 cup apple sauce, unsweetened
1 cup sugar, organic
3 tsp vanilla extract
2 cups zucchini, grated

Recipe Directions for Gluten Free Zucchini Bread

  1. Preheat oven to 325, grease two loaf pans.

  2. Combine flaxseed meal with 9 tablespoons of hot water and let sit till thick.

  3. Sift together almond meal, brown rice flour, quinoa flour, salt, baking soda, baking powder, and cinnamon.

  4. In a separate bowl, whisk eggs, apple sauce, agave nectar, brown sugar, vanilla, and zucchini.

  5. Fold dry mixture into wet zucchini mixture gently.

  6. Bake about 45 minutes or until toothpick inserted in center comes out clean and crust is golden.
