Recipe Ingredients for Gluten-Free Vegan Lasagna

2 cup, cubes Eggplant
0.67 cup Fire-Roasted Tomato
12 tbsp Salsa
3 oz Tomato Paste
3 cup, pieces or slices Mushrooms
5 large Onions, Spring Or Scallions
0.5 large Onions
1.5 cup, chopped Kale
2 cups Mixed Baby Greens
1.5 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 serving soyganic firm tofu
1.25 cup Shreds
1 tbsp Garlic Powder
1 tbsp, ground Basil, Dried

Recipe Directions for Gluten-Free Vegan Lasagna

  1. Peel the eggplant, then using the peeler remove the flesh in strips to make long, slender noodles. Replace the lasagna noodles with the eggplant.

  2. Combine pasta sauce, tomato paste, salsa, mushrooms, onions, and greens in a large bowl

  3. Press tofu, crumble into small bits, and combine with tomato paste mixture

  4. Make an inch-thick layer of the paste mixture on top of a bed of eggplant noodles

  5. Top with thin, round slices of zuchinni

  6. Create another layer of eggplant noodles

  7. Top with 1/2 cup of daiya cheese

  8. Create another layer of the mixture and top instead with thin slices of mushroom

  9. Top with a final layer of eggplant noodles, remaining daiya cheese, and a dusting of basil and chopped scallions

  10. Bake for 45-60 minutes (until daiya is melted and browned, and noodles appear golden) at 350 degrees Celsius

  11. Let cool for 15 minutes before eating

  12. Serves 4-6 people
