Corn meal and rice flour muffins for gluten intolerant diet; no dairy or eggs.

Recipe Ingredients for Gluten free vegan corn muffins

4 cups brown rice flour
4 cups cornmeal
4 tbsp. baking powder
4 tsp. salt
28 grams (Bob's Red Mill) Guar Gum
1 cup honey
1/2 cup olive oil
2 quarts water

Recipe Directions for Gluten free vegan corn muffins

  1. Preheat oven to 375 F.

  2. Combine flours, baking powder, salt, and guar gum.

  3. Separately mix oil and honey and add to the dry mix.

  4. Stir in the water until the texture is thick and "gooey".

  5. Line muffin pans with cupcake papers, and drop about 1/4 cup of batter into each.

  6. Bake at 375 F. for about 20 minutes.

  7. Note: This is a super large batch, I like to make it all at once and freeze for quick breakfast or lunches.
