These sunflower seed butter cookies are the perfect cookie for those with peanut and/or gluten allergies

Recipe Ingredients for Gluten-free sun butter cookies

1 cup sugar
1 cup sunflower seed butter
1 large egg

Recipe Directions for Gluten-free sun butter cookies

  1. Preheat your oven to 350 degrees. Beat the egg and sugar together first, and then add the sun butter.

  2. Stick the dough in the fridge for about an hour after that so that it's firmer, then roll it out into a log approximately 2 or 3 inches in diameter, and slice it into quarter inch thick slices. Or if you have a very small cookie scoop, this method works well with the chilled dough. Making them about 2" around will give you a count of around 45. I like to make mine 3" around and I get 30. If you need more, double your batch. Its important not to make your cookies too big, or else they may be raw on the inside and burned on the outside.

  3. Bake them for 10-12 minutes on a cookie sheet lined with parchment paper, a silpat, or non-stick foil. The middle of the cookies might look wet and shiny when you take them out. You don't want the cookies to brown so watch your first batch carefully until you know exactly how long you need to bake them for. Be careful not to burn them! The cookies should be firm, but not too crisp.

  4. Let them cool for about 10 minutes before lifting them off the cookie sheet.
