Recipe Ingredients for Gluten Free Spinach-Mushroom Quiche

3.5 egg Organic Free-Roaming Large Brown Eggs
2 oz Baby Spinach Salad
0.25 cup pieces Mushrooms
0.33 medium White Onion
1 serving Extra Virgin Olive Oil
0.75 clove Garlic
6 dash Salt, Table
3 dash Pepper, Black
0.5 Can Coconut
4.5 serving (Whole Foods) Gluten Free Pie Crust

Recipe Directions for Gluten Free Spinach-Mushroom Quiche

  1. Preheat oven to 350 degrees, thaw pie crust on countertop.

  2. Chop up spinach, onion, mushroom and garlic into small pieces.

  3. Place pie in oven with a crust shield on it for ten minutes- this ensures the middle crust of your pie won't be soggy and soaked with eggs.

  4. While the crust is pre-baking, heat the olive oil in a small nonstick pan over low heat.

  5. Once heated, add the onions, some of the salt, and pepper. Let them fry until golden-brown, stirring occasionally.

  6. Add the rest of the veggies and the garlic and place a tight-fitting lid on the pan for about 2-3 minutes.

  7. Let the veggies and pie crust cool for a few before putting the veggies in the bottom of the pie.

  8. Beat/mix the eggs and coconut milk together with the rest of the salt, and pour over top of the veggies into the pie.

  9. Bake for about 40 min to an hour, depending on your oven.

  10. Optional: add a tablespoon or two of parmesan to the top around the forty minute mark for some added flavor!
