Recipe Ingredients for Gluten-Free Sour Cream Chicken Enchiladas

3 c chicken breast
1/2 c green chiles, roasted
3/4 c sour cream
1 oz lime juice
1/4 tsp cumin
10 corn tortillas
1 1/2 c cheddar cheese, shredded
1 T olive oil
1 small onion
1 tsp chili powder
4 garlic cloves, minced
28 ounce Fire Roasted Crushed Tomatoes
1 tsp Agave Nectar
1/4 tsp balsamic vinegar

Recipe Directions for Gluten-Free Sour Cream Chicken Enchiladas

  1. Lightly oil 13"x9" baking dish

  2. Preheat oven to 350 degrees F.

  3. In a mixing bowl, toss cooked chicken, chopped green chiles, sour cream, and lime juice; season w/cumin and set aside.

  4. Make sauce:

  5. Heat olive oil in medium saucepan over medium heat and gently sauté onion and spices for 5 minutes.

  6. Add garlic, tomatoes, agave, and vinegar and simmer. Cover and cook 15-20 minutes.

  7. Assemble enchiladas:

  8. Spread a spoonful (about 4oz.) of sauce in the bottom of the baking dish.

  9. Heat each tortilla in scant amount of olive oil before stuffing it, until coated and softened.

  10. Set warm tortilla into baking dish and coat it, spooning a tenth of the chicken mixture into the center of it and then roll it up, seam side down. Repeat for remaining tortillas.

  11. Pour all of the sauce over the enchiladas and top with shredded cheese.

  12. Bake at 350 degrees F for 20 minutes, until the chee is melted, the sauce is bubbling, and the enchiladas are hot.
