Can be modified with lemon zest, other flavorings and spices to taste. Modify this for brunch and top with fruit - strawberries and blueberries are both wonderful. Can be savory with basil, oregano, etc. Great for light dinner with marinara sauce and a side salad as well.

Recipe Ingredients for Gluten Free Ricotta Pancakes

4 large eggs, separated
1 cup part-skim ricotta cheese
1 teaspoon vanilla
1 teaspoon cinnamon

Recipe Directions for Gluten Free Ricotta Pancakes

  1. Heat skillet to medium high heat.

  2. Beat egg whites in separate bowl until peaks form.

  3. Combine egg yolks and ricotta and beat until smooth and well blended. Add vanilla and cinnamon and mix thoroughly.

  4. Add a scoop of egg whites and fold to lighten batter. Add additional scoops of egg whites and fold until incorporated.

  5. Butter or oil skillet and scoop 1/4 cup of batter onto skillet to form pancakes. When pancakes are cooked ~ halfway through, flip them over to finish cooking, another 1-2 minutes.

  6. Serve immediately. Note that pancakes may deflate a bit as they cool, as they have a souffle-like texture.

  7. Top with fruit or other topping of choice.
