Recipe Ingredients for Gluten Free Rhubarb Bars

240 g Gluten Free All Purpose Flour
1 tsp baking powder
1/2 tsp xanthan gum
1/2 cup cold coconut oil
2 eggs (beaten)
3 tbsp vanilla almond breeze
550 5 cups rhubarb
10 g (1 package) raspberry sugar free jello
1 cup sugar
120 g gluten free all purpose flour
1/2 cup cold coconut oil

Recipe Directions for Gluten Free Rhubarb Bars

  1. Preheat oven to 375F

  2. In a large bowl, combine flour, xanthan gum and baking powder.

  3. Cut in coconut until mixture resembles coarse crumbs. Stir in eggs and milk just until moistened.

  4. Press onto the bottom of a 13-in. x 10-in. glass baking pan coated with cooking spray.

  5. Top with rhubarb; sprinkle with gelatin.

  6. For topping, in a small bowl, combine sugar and flour. Cut in butter until resembles coarse crumbs. Sprinkle over top.

  7. Bake at 375 for 35-40 minutes or until lightly browned. Cool on a wire rack.

  8. Cut into bars.
