Quiche Lorraine made with Potato Crust

Recipe Ingredients for Gluten-Free Quiche Lorraine

6 ounces Ore-Ida Shredded Hash Browns
5 tbsp. melted butter
3/4 cup sour cream
1/2 cup half and half
4 large eggs
1/2 pound bacon
2 medium onions, sliced thin
1 c. shredded Swiss cheese

Recipe Directions for Gluten-Free Quiche Lorraine

  1. Preheat oven to 350 degrees. In a large bowl toss together the hash browns (can be any brand of hash browns) and melted butter, mixing thoroughly but not enough to mash the potatoes. Wipe any butter remaining in the dish or pan where it was melted with a paper towel and use it to grease a 9-inch pie plate. Press the potato mixture firmly and evenly onto the bottom and sides of the pie plate. Bake empty for 20 minutes. Remove from oven and set aside.

  2. Meanwhile, put the sour cream in a medium bowl and gradually stir in the heavy cream, making a uniform mixture. Beat in the eggs, salt and pepper. Set aside.

  3. Fry the bacon bits in a large pan until browned and crisp; drain on paper towels, leaving bacon fat in the pan. Fry the onions in the bacon fat (careful of spatter when adding to the hot fat), stirring frequently, until they are translucent and softened.

  4. Scatter the bacon in the prepared crust; Spread the onions over the bacon. Stir the cheese and pepper sauce into the cream mixture and pour over the onions. Bake about 40 to 45 minutes, until the top is golden and firm to the touch.
