Pumpkin bread baked as muffins - Gluten Free version!

Recipe Ingredients for Gluten Free Pumpkin Muffins

3 cups Gluten Free All Purpose Baking Mix
2 cups sugar
3 tsp baking powder
2 tsp baking soda
6 g xanthan gum
2 tsp cinnamon
1 tsp salt
2 cups pumpkin
1 1/2 cup vegetable oil
4 eggs

Recipe Directions for Gluten Free Pumpkin Muffins

  1. Sift together flour, sugar, baking powder, baking soda, cinnamon and salt. Add Pumpkin, oil and eggs and mix for 2 minutes on medium. Divide into 24 standard muffin tins and bake for 20 minutes on 350.
