Like pineapple fried rice but with the grain quinoa instead

Recipe Ingredients for Gluten free Pineapple Fried Quinoa

1 cup uncooked quinoa
1 cup low sodium chicken broth
1 cup water
3 egg whites
1 teaspoon sesame oil
1 teaspoon chili powder
2 cloves garlic minced
1/4 sweet onion
1 cup crushed pineapple
1 tablespoon chopped fresh cilantro
1/4 cup Tamari Soy Sauce

Recipe Directions for Gluten free Pineapple Fried Quinoa

  1. Rinse quinoa until water runs clear if it isn't pre-rinsed. Bring the quinoa, chicken broth and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the liquid has been absorbed, about 15 to 20 minutes.

  2. Beat the eggs in a bowl. Heat a skillet over medium heat. Cook and stir eggs until scrambled. Remove eggs from the skillet and set aside. Heat sesame oil over medium-low heat. Cook and stir garlic for 2 minutes, then add chili powder and stir in green onions to heat through. Stir in pineapple and cilantro, then add the cooked quinoa. Toss with scrambled eggs, soy sauce until thoroughly heated.

  3. Makes 5 1 cup servings. Tamari is a gluten free soy sauce. Regular soy sauce is fine if you do not have a problem with gluten.
