Light and nice. Omit sugar and add a pinch of salt for savoury pancakes. Serve with berries and/or sliced bananas. Yum.

Recipe Ingredients for Gluten-free pancakes

1 3/4 cups flour, gluten free
1/2 tsp baking powder
1 tbsp sugar
1 1/2 cups milk
25 g butter

Recipe Directions for Gluten-free pancakes

  1. Sift flour, baking powder, sugar into a bowl.

  2. Put eggs, melted butter, milk in a jug.

  3. Whisk well until smooth.

  4. Grease a heavy frypan. Heat it on medium - don't let pan get too hot. Pancake cooking is a "drying out" process, and if the pan is too hot, they will burn before they are cooked properly.

  5. Pour 1/4 cup batter into pan and swirl into a round shape. The bigger the round, the thinner the pancake.

  6. Cook until bubbles appear and break. Flip over and cook the other side.

  7. Stack them up and put in warming drawer.
