Delicious, gluten-free pancakes that are easy to make and very filling!

Recipe Ingredients for Gluten-Free Pancakes

1 cup buckwheat groats
1 cup millet
2 cups water
1/4 cup sunflower seeds
1/4 cup coconut flakes
2 tablespoons maple syrup or honey
1 medium egg
2 tbsp butter, glee, or coconut oil
1 teaspoon cinnamon

Recipe Directions for Gluten-Free Pancakes

  1. Soak buckwheat groats, millet, sunflower seeds and coconut flakes overnight.

  2. The next day, blend the soaked mixture and all other ingredients together. Heat up a skillet, grease skillet with butter or olive oil, and spoon up some pancakes!

  3. When you blow on the pancake and the bubbles pop (and leave a hole) you know it is time to flip the pancake.

  4. The original recipe said not to top with fruit or jam, as it will feel to "heavy". I tend to stick to maple syrup.
